Hold up, you're talking about surgery with a pocket knife? That sounds like a major infection risk for the bird. Maybe the hen got lucky that one time, but that's not a safe plan for every sick chicken. I'd be way too scared to try that myself.

Can we talk about how many people are still using active dry yeast without proofing it first

That part about "modern active dry yeast is more reliable" got me thinking. What if the yeast packet sat in a hot delivery truck or something? I've had a batch just NOT rise before. Do you think the proof step is more about checking your specific yeast is still alive, not about the yeast type being unreliable?

Getting a SIM card in Lisbon turned into a two day project

Two days for a SIM card is the kind of tourist trap they don't put in the guidebooks. I can picture you just standing in some store holding your passport while a guy types with one finger. The future is apparently downloading your phone service before you even pack your socks. Next time just mail them your passport and a blood sample ahead of time to save the trip.

Had a big crack show up in a custom knife blade after heat treat last week. Do you try to salvage it or just scrap the piece?

Grind it down a quarter inch past where the crack ends and see if it's still there. If it's just surface level you can re-profile the edge and keep it as a shorter blade. I've got a skinner that started as a bowie before the quench went wrong. Sometimes you just end up with a different knife than you planned.
