Rant: I ruined a whole batch of sausages by over-seasoning.
Tasted fine raw, but after cooking they were way too salty. What's your go-to method for testing seasoning before processing?

Always fry a tiny piece of the mixed meat before you commit the whole batch. The raw taste totally changes after cooking, especially with salt. I ruined a few links myself that way before I learned to do a test fry in the pan.

Push back on this idea because my results are totally different. Testing a piece never shows the TRUE taste of the whole batch to me. That little fried bit cooks too fast and just isn't the same. I actually wasted more meat when I used to do those pan tests. Now I mix everything with confidence and cook it all at once. You get a better feel for the real flavor that way, in my opinion. Skipping the test fry works way better for my cooking style.

My grandma's secret meatloaf mix taught me to ALWAYS test fry. Lost a whole batch to crazy salt one year. Never making that mistake again.
