inUnpopular opinion: Speeding up breakdowns is ruining the finish on my cuts, idk if you've noticed.
My first set of good kitchen knives taught me that lesson the hard way. I ruined a perfectly fine edge on my chef's knife by trying to sharpen it in a hurry one night. Hannah994 is right, it never turns out well when you rush. Now I set aside a whole quiet hour on a Sunday, put on some music, and take my time with the stone. The difference in the cut is honestly night and day.
