Finally got my air fryer chicken thighs right after a month of trying
I kept trying to make crispy skin chicken thighs in my air fryer, but for weeks they came out rubbery or burnt. I tried every tip online, from patting them dry to using baking powder. The real problem was the temperature and time. I was cooking them at 400 degrees for 20 minutes like most recipes said, but that just didn't work for my model. After maybe ten bad batches, I tried 375 degrees for 25 minutes, flipping halfway, and it was perfect. The skin got super crispy and the meat stayed juicy. It took me over a month to figure this out. Has anyone else had to totally change the temp and time from a recipe to make it work in their air fryer?

Check the manual for your specific model, mine actually says to never follow blanket rules like that.

My old air fryer manual said to always add 25 degrees to any oven recipe. I followed that rule for years and burned so many things. Your post made me check the new manual for my current model, and it actually says the opposite, to lower the temperature by 25 degrees. No wonder my fries have been coming out weird. I guess every machine really is different.

Saw a whole article about this last week... it was basically saying air fryer recipes are just a starting point. The writer tested three popular brands with the same frozen fries, and each one needed a totally different time to get them crispy. One brand was perfect at 400 for 12 minutes, another needed 380 for 15. Makes you wonder if the recipe bloggers even say which machine they use.
