Tried to make a 'quick' batch of pickles for a pop-up last minute and they turned out fizzy
I had a small spot at a local market in Echo Park and ran out of my usual pickled red onions. I figured I could whip up a new jar in 2 hours using a 'quick pickle' method with hot vinegar brine, just like I always do. But this time, I added a pinch of sugar and a fresh jalapeno I hadn't used before. Sealed the jar while it was still warm. When I opened it at the market, the lid popped and the liquid was slightly carbonated. They tasted fine, but the texture was off and the fizz was weird on a taco. I think the fresh pepper or the sugar might have kicked off some fermentation in the warm jar. Have you ever had a 'quick' pickle go fizzy on you? What do you think caused it?

Oh man, that's the universe telling you not to rush pickles! I did something similar once, left a jar of quick-pickled radishes in a warm spot. Opened it a day later and it hissed at me like an angry soda can. Definitely the sugar and heat teaming up to make science happen.
