Warning: my 'quick' sauerkraut in a plastic bag versus a real crock was a disaster
I got impatient and tried to ferment a batch of red cabbage in a ziplock bag with a water weight, thinking it would be fine for a week... it molded and leaked pink brine all over my fridge shelf. The crock I used for the next batch, with proper weights and an airlock, gave me perfect kraut with zero fuss. Has anyone else had a ferment go totally wrong because of a shortcut container?

What made you decide to try the bag method instead of just waiting for the crock to be free? It seems like the extra day or two of waiting would be way less work than cleaning a fridge.

Oh man, the container choice is SO key. I tried fermenting hot sauce in a fancy swing-top bottle once and it basically became a tiny bomb, spraying chili all over my kitchen wall. Now I just use the cheap plastic airlock lids and they never fail.
