My sourdough starter straight up died after a week in the fridge.
I left it in there for a cold ferment, but my fridge in my new apartment in Tempe is way colder than my old one. I pulled it out yesterday and it was just a gray, sad puddle with zero bubbles. I had to toss the whole jar and start over from scratch. What's the longest you've safely left a starter in the fridge without feeding it?

Left mine for a month once, but that's pushing it. My fridge runs cold too, so I try not to go past two weeks now. Learned the hard way like you, had a starter go gray and watery.

Gray and watery sounds bad, but is that actually mold or just hooch? Mine looks like a science experiment sometimes but bounces back after a couple feeds.

Your fridge turned your starter into a sad, gray science fair reject. My record is three weeks, but it came out looking like it had seen a ghost and needed five feeds to stop smelling like old gym socks. Tempe fridges are a different breed of cold. Maybe wrap the jar in a towel next time, like you're tucking it in for a long nap.
