The immersion blender I swore was overhyped until I hit a 60 quart stockpot
For years I thought immersion blenders were just a waste of space in the kitchen. I always used my bar blender for soups and purees because it felt more powerful. Then about 6 months ago we got a massive catering order for butternut squash soup at the restaurant in Portland. I had a 60 quart stockpot full of hot soup and no way to safely pour it into a bar blender in batches. One of my line cooks handed me his personal immersion blender and said just try it. I blended the whole pot in like 3 minutes right in the pot and it came out silky smooth with zero mess. Now I use one for everything from emulsions to blending hot liquids in deep pots. Has anyone else had a tool they thought was useless that turned out to be a lifesaver in a big batch situation?
