I switched from a standard mandoline to a Benriner for prep at my new spot in Austin

The difference in speed and consistency is wild, especially for a 50-pound bag of potatoes. The Benriner's blade just stays sharper and the grip feels way safer when you're moving fast. Anyone else have a prep tool that completely changed their game on the line?

Oh man, that's the truth. I started using a good steel turning slicer for onions and it's the same deal. You get that perfect, thin half-moon every single time without even thinking. What other small upgrades have you found that make a huge difference?

Switched to a microplane grater and now I'll never go back to that old box grater.

I used to think a cheap vegetable peeler was fine until I got a Kuhn Rikon one. The difference in how it glides through potato skin is actually kind of shocking. It went from a chore I avoided to something that takes ten seconds. I feel silly for putting up with the old one for so long.
