Watch out for that 'professional' knife sharpening service in the mall

I dropped off my main boning knife at the 'Edge Masters' kiosk in the Westgate Mall last month, paid $25, and got it back with a messed up bevel. The edge looked shiny but it couldn't hold through half a hog before going completely dull. I ended up having to re-profile the whole thing myself, which wasted about two hours of my time. Has anyone found a local sharpener they actually trust, or are we all just better off doing it ourselves?

Totally agree with @julia_fisher28 about learning to do it yourself. That "old guy at the farmer's market" type is always the real deal, they actually use the tools they sharpen. The mall spots just run every knife through the same grinder and call it a day. Once you get the hang of a stone, you realize how bad most paid services are. You also learn how to fix the damage they cause, which is its own useful skill.

Yeah, I had the same thing happen with a mall sharpener a few years back. I finally just bought a decent whetstone and learned to do it myself. It was frustrating at first, but now I can put a better edge on my knives in about ten minutes while watching TV. For anything I really mess up, there's an old guy at the farmer's market who does it right for five bucks.
