I swore by dried beans, but a bag of lentils changed my whole game
I always thought lentils were just for soup, but I grabbed a $1.99 bag on a whim and had a full, spicy dal ready in under 30 minutes with no soaking. It's now my go-to for a fast, filling dinner when I'm wiped from a long day. Anyone have other super quick lentil recipes that aren't just soup?

A food blog I read swears by blending cooked lentils into a quick pasta sauce.

Blending them into sauce feels like extra work. I just fry them with onions and spices for a lazy taco filling.

@james_martin93 that blending trick sounds good but I found another angle. Grab red lentils and toss them into a simple chilaquiles situation. Fry up some tortilla chips with salsa verde, dump in half a cup of uncooked lentils and a splash of broth. Cook 10 minutes until the lentils soften and soak up all that spicy tang. Top with a fried egg and cotija. Hits different when you want that crunchy saucy thing.
