That time I realized I was overcomplicating my marinara sauce for like 15 years

I grew up watching my mom simmer sauce for hours with like a dozen ingredients. Last year a buddy from Boston told me he just crushes a can of San Marzano tomatoes with some garlic and basil and calls it done. I tried it one Tuesday night and honestly, it tasted better than anything I ever spent 3 hours on. Has anyone else had that moment where you found out simple actually works better?

Solidarity man. I did the exact same thing with chili - used to brown meat, toast spices, simmer for hours, the whole deal. Now it's just ground beef, a can of fire-roasted tomatoes, and chili powder. Tastes way better and I'm not ordering pizza because I'm starving at 9pm. Crazy how we trick ourselves into thinking hard = good, right?

Thinking hard = good" got me. I spent years making this complicated bolognese that took all afternoon. Now I just dump a jar of sauce and some ground turkey in a pan. Tastes fine and I eat before 10pm. Guess my taste buds aren't as sophisticated as I thought.
