inI used to think sourdough starters were just a fussy trend until my buddy in Asheville gave me a jar of his 8-year-old one last fall.
Eight years is a serious starter. My place gets super dry in the winter too. Are you keeping it on the counter or in the fridge? I found mine needed a lot more frequent feedings when it was out on the counter, like every 12 hours instead of 24. The hydration level got all messed up.

inMy neighbor said my driftwood sculptures were 'just cleaning up the beach, not making art'. It made me think about where the line is.
Honestly, that neighbor logic is so weird when you flip it. If a sunset is just the sun going down, then a painting is just some paint on a wall. But we all know it's not. The whole point is the feeling it gives you. So why do people try so hard to make simple things sound boring? It's like they're scared to just admit something is nice to look at.

inTIL the museum in Pensacola has a cutaway radial engine you can turn by hand
Hands-on exhibits can be a huge mess though, with broken parts and sticky handles. Sometimes a clear diagram in a book explains the concept better without all the noise. Kids might just spin things wildly without actually learning how it works.

inHonestly thought my cheap blade grinder was fine for my French press
Wait, you were using a blade grinder for a French press this whole time? That explains the bitter sludge, those things make way too many tiny powder bits. A basic hand burr grinder is a total game changer for under fifty bucks.

inJust realized my bullet journal looked completely different after a year of daily use
I used to think that too, but honestly seeing yours changed my whole view.
