I used to stir constantly, but a still roast changed my mind
For years, I believed keeping the beans moving non-stop was necessary. Then I read a tip saying less agitation helps the roast develop better. I tested it with one batch, barely touching them. The beans came out more even and had a deeper smell. I don't stir much anymore.

Try reducing your stirs halfway through the roast. I found that lets the beans develop more flavor without burning. Honestly, it made a big difference in my last batch.

How do you figure out the exact moment to cut back on stirring? Does it depend on the bean type or just going by smell?

Are you trying to unlock some secret coffee wizard level or something? I just stare at the beans until they look like they might talk back, THEN I stop. Honestly I'm half convinced I heard my last batch whisper 'please no more'. My cat gives me weird looks the whole time, so that's my main sign. It's probably more about the smell than the bean, but what do I know.
