TIL a drywall fix from a wavy wall in my kitchen redo

I was hanging new board in my kitchen and the old plaster behind it was all bumpy. First sheet I put up had a big hollow spot that cracked after mudding. Stuck a long level across the studs and packed the low spots with extra mud before screwing the drywall on. No more cracks and the finish came out smooth. What's your go-to method for dealing with uneven backing?

That old plaster in my 1910 house was so bad I had to shim almost every stud. I used cedar shingles ripped into thin wedges. A long straightedge is key, you find the high spot on the stud and pack out the low areas. It's a fussy step but it's the only way to get a flat wall without a ton of mud later.
