Warning: The pour-over station at that new downtown cafe is ruining your coffee

I popped into Brew Lab on 5th Street yesterday and watched them use water just off boil for a light roast, then let the bloom sit over a minute. Has anyone else noticed baristas skipping the thermometer or timer lately?

lol I've definitely been that person fussing over water temp while my dog stares at me like I've lost my mind. My palette can barely tell the difference between a pour over and a k-cup on a good day so maybe I should just chill out.

I timed it - their bloom was exactly 52 seconds, not a minute, and the water temp was 195 which is totally fine for most medium roasts they carry. Honestly, the whole "precision" obsession in coffee is getting out of hand when you see people freaking out over a 5 degree difference that nobody could taste in a blind test. Your taste buds adjust way faster than any thermometer anyway.
