I finally stopped being a coffee snob about dark roasts
For years I only bought light roasts from specialty shops. Thought dark roasts were just burnt beans that masked bad origin flavors. Then last month my local roaster in Portland had a Colombia dark roast on sale for $12 a bag. I figured what the heck and bought it. Made it on my V60 with a slightly lower water temp around 195. It had this smooth chocolate flavor without any bitterness. Now I'm wondering if I've been missing out on other dark roasts. Anyone else change their mind on a roast level they swore they hated?

Take it down a notch. You found one decent dark roast from a good roaster for cheap. That doesn't mean all dark roasts are suddenly worth your time. Most of them still taste like ash and regret. You just got lucky with a well handled bean that wasn't roasted into oblivion. Enjoy it, but don't act like you unlocked some coffee secret.
