I finally dialed in a pour over after 8 months of trial and error
I bought a V60 last January and figured it would be simple. Instead I spent months getting bitter cups that tasted burnt no matter what I did. I tried changing grind size and water temp but still got bad results until last week. Turns out my tap water was way too hard and I just needed a basic filter. Has anyone else found that water quality messed with their coffee way more than they expected?

Wait. Eight months? And it was just the water? That's wild. I would have lost my mind.
I had a similar thing happen with my Chemex. Spent weeks blaming my grinder, my pour technique, everything. Then I tried bottled water once and it was like night and day.
So what filter did you finally use? I'm still paranoid about my tap water now.

Eight months of bitter coffee just to discover my tap water was basically liquid rocks. Pretty sure my kettle had more calcium than my bones. I ended up with a Brita pitcher because I'm cheap and it works fine for now, but my God the mental image of all those angry cups staring at me from the sink haunts my dreams.
