Showerthought: Pushed to use old clams last service and it still bugs me

Last Friday night, the owner told me to serve clams that were off. I knew it was wrong, but he said waste costs too much. We cooked them extra long, but my gut said it was risky. Nobody got sick, but I can't shake the feeling. Always check your stuff, even when the boss says no.

Cooking them extra long? That's still risky as hell.

Ugh yeah don't get me started on risky cooking. My cousin swore by this method for burgers once and let's just say the whole family remembers that vacation for all the wrong reasons.
