I stopped prepping my line the way everyone taught me after a Saturday brunch disaster at The Dutch

I was at The Dutch in NYC 2 months ago and watched the brunch station fall apart because everyone was prepping mise the "right way" with uniform little bowls instead of thinking about flow. Has anyone else scrapped the classic system for something that just works faster for your specific station?

@wesley801 I think you're actually thinking of "uniform chaos and bowls" since the original phrase is "order and chaos" not "bowls and chaos.
