Burned 200 steaks last Saturday before I figured out the grill zone trick

So I was running the flat top during a busy dinner service in downtown Austin, and I kept burning the second round of steaks. The first set came out perfect but the grill was way hotter by the time the next tickets hit. I finally asked the old timer next to me, and he showed me how to use the cool zone near the edge for resting. Has anyone else figured out a better way to manage heat zones on a crowded grill?

Jumped into that same trap my first week. I was blazing through ribeyes like a maniac till I figured out the cool zone is basically a cheat code. @maxm50 is right though, it's like finding out you don't have to run the whole flat top at jet engine levels. Just gotta leave a little real estate on the edge for the stragglers and everything comes out even.

Grill zone trick" is basically the same as learning that life has cold spots where you can catch a breather. It's wild how much smoother things get once you realize not every part of the fire needs to be cranked.
