A jar from next door made me see fermenting in a new light

I always saw fermenting as a fussy trend with little payoff. Then my neighbor, who cooks at home, shared some kimchi she made. The taste was so rich and complex, it beat anything from a store. I started adding fermented items to my menu and customers love it.

I used to think it was just a lot of work for not much. A friend's homemade sauerkraut totally proved me wrong, the flavor is on another level.

Yeah I was the same way, thought it was just a foodie thing. Then I tried a friend's homemade hot sauce that fermented for months. The depth of flavor was insane, like nothing you get from a bottle. Totally changed how I see it now.
