Update: I keep seeing new guys at the shop saw through the aitch bone on pork shoulders like it's nothing, which just wrecks the blade and makes the cut look ragged.

Has anyone found a good way to show them the proper seam without just taking the knife away?

Ugh, that's so frustrating to watch. What if you just did the cut perfectly right next to them, real slow, without saying a word? Sometimes seeing it is believing.

That's actually a solid idea from @angela_dixon. Just doing it clean and quiet could really drive the point home. Some folks need the visual proof more than any argument. A silent demo can cut through the stubbornness where words fail. Might feel a bit petty in the moment, but it gets results. Ever tried that method yourself?
