Saw a chart at the Ohio meat packers show saying 1 in 3 whole loins comes back as a short weight
I checked our last 40 loins against the scale slip and 14 were under by 4 to 11 ounces, which adds up at $4.20 a pound. Anyone else weighing whole loins before trimming, or are you all trusting the packer ticket?
Is a few ounces per loin really worth the hassle of disputing every ticket? That's maybe a buck or two a loin, and you'd probably burn more than that in time fighting the packer over it.
