Old timer at the shop made me rethink my whole knife habit
Back in March, this retired butcher came in to drop off his grandson's first knife for sharpening. He watched me reach for my usual steel and said, 'son, that's for show, not for work.' He showed me how he tests an edge on his forearm hair, never on a thumb like I was doing. I never had someone call that out so direct, still think about it every morning. Anyone else had an old school guy school them on basics?
