My cashier at the store had a genius idea for leftover veggies
I was chatting with the cashier while buying groceries yesterday. She told me to mix any leftover veggies with rice and eggs for a cheap fried rice. How do you use up veggies before they go bad?

My fridge always has sad carrots and celery that need saving, so I tried that fried rice trick and accidentally made it way too salty. I learned that sturdy veggies like bell peppers and onions work better, they don't get mushy. harper_gibson2 has the right idea asking about which ones are best, because my wilted spinach was a disaster last time.

How much soy sauce did you even use? My fried rice crimes are legendary, like the time I tried to use zucchini and it turned into a sad, wet soup in the pan. Broccoli and carrots usually survive my kitchen experiments, they just get a little charred instead of falling apart. I should probably stick to just boiling water.
