Finally made a full week of meals for under $30

Last week, I was really stuck on what to make that wouldn't cost a lot. I got a bag of dried beans, some rice, and a few cheap veggies from the store near my apartment. I made a big pot of bean and rice soup that lasted me for five whole dinners. Has anyone else made a super cheap meal that lasted a long time?

That kind of planning is such a lifesaver when money's tight. I've been there, living off a giant pot of lentil stew that felt like it would never end. It's amazing how far a bag of beans and some rice can really go.

Lentil stew for days is a real mood. My mom used to make a massive pot of chili that just kept getting reheated, and by the end of the week it was more like a thick bean paste. Those cheap meals really do build character, even if you never want to see another lentil. The library class idea is brilliant, more people should know how to break down a chicken like that.

My local library had a flyer for a "dollar dinner" class last month. The instructor showed us how to turn a single cheap chicken into a week of meals, like shredding it for tacos and using the bones for soup stock. It was all about stretching one main ingredient. Your bean and rice soup is exactly that kind of smart cooking.
