A friend in Chicago keeps buying fresh herbs for every recipe and it's costing him a fortune

He made a simple pasta dish last week and spent $4 on basil that he used once and then threw out. I told him to just get a $3 plant from the grocery store or use dried, but he says fresh tastes better. How do you guys save on herbs without giving up flavor?

But has he tried freezing them... I chop up leftover parsley or cilantro and put it in an ice cube tray with a little water. Pop one out when I'm cooking. Tastes way closer to fresh than dried does.

Hold on, that sounds like way too much work just for some herbs. I mean, you have to chop them, fill the tray, wait for it to freeze, and then you're stuck with weird herb ice cubes that water down your food. Dried herbs are fine, they last forever and you just shake them in. Maybe it's just me but freezing seems like a solution for a problem that doesn't really exist.

Freeze them in oil instead of water, no watering down.
