Why does nobody talk about the right way to set a timing belt tensioner?

I keep seeing mechanics set the tension by feel or sound, but the manual for a Shimano 105 groupset clearly says to use the 2.5mm spacer method and a torque wrench set to 4 Nm, which gives a more consistent and longer-lasting setup every time.

It's like that with so many things now. The right way is in the manual, but people just do the quick trick they learned from a video. I see it with my own car's oil filter, the manual says a specific torque but everyone just cranks it on until it feels tight.

Feels tight" is how you strip the threads, man.

My old Honda filter calls for 12 foot-pounds, and @sagesingh is right, that "tight" feeling is a stripped pan waiting to happen.
