Oh man, that's the truth right there. Tbh I tried to speed up a pork shoulder last summer and it came out like shoe leather. My uncle told me the exact same thing, that good smoke just takes the time it takes. Honestly felt like I wasted a whole day and a good piece of meat. You just gotta let it be.

Exactly right, you can't rush it. Trying to speed up a smoke just ruins the whole point. The meat needs all those hours to break down and get that pull apart texture. Wrapping it too early or cranking the heat just steams it and makes it tough. That low and slow time is what makes all the difference between something amazing and a total waste.
