Heads up if you're hitting the new 'Smoke Stack' joint in Memphis

I was there last Friday and saw them using liquid smoke in the kitchen (caught a clear view from the counter). Has anyone else run into this at a place that's supposed to be legit?

Actually, a lot of professional kitchens use a bit of liquid smoke in things like baked beans or barbecue sauces. It's a flavor booster, not a replacement for real smoking. The real test is the meat itself. If the brisket or ribs taste like they came from an oven, then there's a problem.

So what's the line for you then? Like if a spot calls itself a smokehouse but uses liquid smoke in the beans and the sauce, is that still okay as long as the meat is legit? Feels like the sides are part of the whole experience too.

Ugh, that's such a letdown for a place with that name!
