My first Memphis in May I got the same note on my brisket. Switched to a lighter fruit wood like apple for just the first 3 hours, then let it ride with no new smoke. @gavine41 is onto something, sometimes they just arent used to a heavier bark. The next year that same method scored way higher. Its all about finding a balance that works for your pit.

Over-smoked" is just a judge's way of saying "too good for me.

Yeah I saw a food writer say that once. They said judges use "over smoked" when they just don't get the flavor profile lol.
