Just realized I used to bake everything at 350F like a robot, but after my third flat cake in a row, I started checking the actual recipe temps.

Turns out my old oven runs hot, so now I use an oven thermometer and adjust. Anyone else have to fight their own appliance to get a decent bake?

My grandma taught me to bake by feel, not numbers. She never owned an oven thermometer in her life. I get the idea of checking, but I honestly believe learning your own oven's quirks is part of being a good baker. My current one definitely runs cool, so I just know to add a little more time or bump the dial a bit. Relying too much on gadgets can take the instinct out of it.
