Swapped my stand mixer for a hand mixer on big batches, no regrets

I used to haul out my 7-quart stand mixer for every brioche and babka dough, even 6-loaf days. Last month my shoulder gave out after lifting the bowl one too many times, so I grabbed a $25 hand mixer from the local kitchen supply. Took about 15 extra minutes of kneading by hand, but the dough came out just as smooth and I saved my back. Now I only use the stand mixer for meringues or when I'm doing double batches. Anyone else ditch the big machine for smaller tools on purpose?

Whisking by hand for 20 minutes beats hauling that beast out every time, I switched to my old hand mixer for most bread dough and never looked back. Just keep the stand mixer for whipped cream days and you're golden.
