My sister called me out for overcooking chicken wings and she was right

She told me to stop following the recipe book and just check internal temp instead. I was doing 400 for 20 min like it said but they came out dry every time. Dropped to 375 for 15 min and they came out perfect last night. Anyone else ditch the recipe timers and just use a meat probe instead?

My 2018 Traeger Pro 34 runs hot by about 25 degrees, took me a year to realize that’s why my wings were hockey pucks.

I mean no disrespect to you @the_hugo, but I think 25 degrees is well within the normal range for those Traegers. A lot of pellet grills fluctuate and you kind of have to learn to work around it. Maybe your wings just needed less time or a different rub?
