Divided on pulling bolted lettuce, taste vs looks

I grew a batch of romaine that shot up flowers in the July heat, and the leaves turned bitter as heck. My neighbor swore pulling it was the only move, but my grandma always said bolted lettuce still makes great soup stock if you harvest early enough. I tried the soup route with a few stalks from my backyard in Austin, and honestly it was fine, not amazing. So which side are you on, do you yank the ugly bolters or find a use for them? Has anyone actually gotten a good meal out of lettuce that went to seed?
