Old timer at the job site yesterday changed how I see air entrainment
He told me to stop worrying so much about the air content numbers and just watch how the concrete handles on the float. After 12 years of obsessing over the meter readings, I tried his way on a garage slab today and it came out way smoother. Has anyone else had an old hand tell you something that went against the book?

Gotta say I was skeptical too but tried it last week and it works.

Whoa, wait, you actually tried it? I can't believe you just went with it on a garage slab without checking the meter first. I'm the same way after all those years of schooling us on the numbers, and @ninaross' skepticism sounds about right. My old mentor once told me to stop measuring slump and just watch how the concrete piles up on the shovel, and I thought he was pulling my leg. But doggone if it didn't work for a sidewalk I did last summer.
