This guy at the coffee shop in Austin told me I was drinking it wrong

I was at a place on South Congress last month, just trying to enjoy a simple pour over. This older guy next to me at the bar leans over and says, 'You're going to burn your tongue off drinking it that hot.' I told him I liked it that way, and he just shook his head. He went on for like five minutes about how the flavors don't open up until it cools to a specific temp, something like 140 degrees. He even pulled out a little thermometer from his bag to prove his point. It was so over the top, but honestly, I tried it his way with the next cup. The weird thing is, he was kinda right. I could taste more of the fruity notes once it cooled down. Has anyone else had a stranger give them coffee advice that actually worked?

My uncle used to microwave his coffee after it got cold. Told him to just make a fresh cup and he looked at me like I suggested something crazy. Some people just have their own whole science.

Honestly I was the same way, always making a fresh pot. Then I started working from home and wasting coffee felt stupid. Now I microwave my afternoon cup every single day. It tastes fine and I'm not pouring money down the drain. Changed my whole view on it.
