Shoutout to my local roaster for fixing my bitter espresso
I've been pulling sour, bitter shots for weeks and couldn't figure out why. Stopped by the roaster yesterday and he said my grind was too fine. Adjusted it this morning and the difference is night and day. What other tweaks should I try now that I've got this sorted?

My uncle's chili recipe just says "add some chili powder" and every time it comes out different. That @charliemartin comment feels like that... people throw out advice like "check the dose" or "just follow the instructions" like it's obvious. But the instructions are often bad or missing key details. Saw it last week with my neighbor trying to mix epoxy, the bottle just said "use equal parts" with no way to measure.
