My pour-over station took 3 weeks to finally get dialed in
Kept getting bitter cups no matter what grind I tried, then realized my tap water in Austin was the culprit. Swapped to filtered water and it took maybe 10 minutes to fix, has anyone else fought their local water supply for this long?

Had a buddy in Phoenix fight the same battle for almost two months. He was ready to sell his whole setup, blaming every bag of beans he bought. Then he visited his sister in Denver, brewed with her tap water, and his face just dropped when it tasted totally fine. He got a simple Brita pitcher after that and never looked back. Local water chemistry is a sneaky beast, for sure.
