Heard a barista say dark roast hides bad beans, tested it on my home setup
Last Tuesday at a shop in Portland, the guy at the counter told me light roasts expose every flaw in the bean, so I pulled three shots of the same lot roasted two ways and the dark one had a bitter finish that masked a sour undertone, anyone else find dark roast just covers up sloppy sourcing?

Portland's water chemistry varies by shop, so that bitter finish might be your tap water, not the roast.
