Walked into a Portland food cart pod, left with a lesson about salt

Stopped by that big cart pod on Division last Saturday, and this one taco cart had a line around the block. I ordered the al pastor and watched the guy hit his grill with a salt shaker like it was a percussion instrument, way more than I'd ever use. It made me rethink my own seasoning, so now I'm asking, any of you ever taste a pro's food and immediately change how you salt at your station?
