Vent: My new hire keeps messing up the risotto timing

I hired a new line cook last month. They're keen but always take the risotto off too soon. I've shown them the right feel three times. How do you train for timing on tricky dishes without being too pushy?

Honestly ninar51, you hit on something there. Seen way too many new cooks get stuck trying to master one showy dish while their basic knife work or station setup is a mess. The obsession over a perfect risotto can wait. If someone can nail the fundamentals like following recipes, keeping things clean, and showing up ready to learn, they'll get to the fancy stuff in time. Pushing for perfection on one thing right away just sets them up to stress over the wrong stuff.
