I went to a diner in Boise and saw them using a rice cooker for grits
I was grabbing a late breakfast at this 24-hour spot called The Griddle last weekend. I saw them scooping grits out of a standard, cheap rice cooker, the kind you get for maybe $20. I always thought you needed a heavy pot and constant stirring to get grits right, or they'd burn or clump. But theirs were perfect, creamy and hot, sitting in that cooker for service. It totally flipped my thinking on needing fancy gear for simple things. Has anyone else tried using a rice cooker for stuff like polenta or oatmeal on a busy line?

Wait, a twenty dollar rice cooker?! That's the real shocker here, I'd expect it to melt!

Nah, those cheap ones actually work fine. Had mine for years, @james661. Just don't expect fancy features.

So what exactly do you think is gonna melt, @james661? The plastic outside gets warm but it's not like it's on the stove. The heating part is just a simple plate underneath... it turns off when the water's gone. Those things are built to do one cheap job forever.
