Had a catering gig where the main protein was still frozen solid an hour before service.
It was a 200-person wedding in Austin, and the salmon was a solid block. We had to get creative with a cold water bath and some very careful timing. Anyone ever had to pull off a thaw that fast without ruining the texture?
