An old timer at the Boise meat show told me to keep a bowl of ice water next to my station when breaking down a side.

Oh man, my buddy tried that and his knife slipped right into the bowl.

Yeah, that "knife in the bowl" story is the perfect warning...

That sounds like a solid tip for keeping your grip steady. A wet handle is a real hazard though, so maybe just wipe your hands on a towel instead. The goal is to stay safe, not create new problems.
