A hog kill in Boise made me ditch my cleaver routine

Watched a guy at a small processing shop break down a 250 pound hog with nothing but a boning knife and a saw. He did more in 20 minutes than I do in an hour with my usual gear. Anyone else ever see a simple setup that humbles your whole station?
