Took me 5 failed cooks to realize my pit probe was reading 25 degrees off
I kept chasing temps on a 12 pound packer and could not figure out why it was coming out dry every time, turns out my old dial thermometer was just straight up lying to me. Dropped $40 on a decent digital one and the next brisket was the best I've done, anyone else get burned by cheap gear for way too long?
A $40 digital thermometer can still read 25 degrees off if you don't check it in boiling water, so the gear might not have been the real problem. You probably just got better at cooking the brisket and the new toy made you feel like you fixed something.
