The time my pork shoulder stalled for 8 hours at a competition in Austin
It was at the Lone Star BBQ Fest, and my 12-pound butt just sat at 160 degrees from noon until almost 8 PM. I had to wrap it in foil with some apple juice and crank the heat on my offset, which felt like cheating. Anyone else ever have a stall that just wouldn't quit?

My old Ford Ranger had a similar stubborn streak, refusing to start on the coldest mornings. It feels like everything from engines to pork shoulders has a built-in test of will. You just have to find the right trick to push through it.

Ever notice how the things we care about the most always seem to hit a wall right when we need them to move? It's like my garden tomatoes that refuse to turn red for weeks, or a work project that just gets stuck on one tiny problem forever. That stall isn't just about meat, it's the universe testing your patience. Makes you wonder if the best results always need that moment where you almost give up.

Actually, I see it the other way around. The stall isn't a test, it's just how things work. Tomatoes ripen when they're ready, and projects get stuck on real problems that need solving. It feels personal, but it's not the universe messing with you. It's just normal process. Waiting for a breakthrough isn't a special recipe for the best results, it's just part of doing the work.
