Stopped at a roadside stand outside Lockhart and the pitmaster pulled a brisket at 203 exactly
I was driving back from Lockhart on Saturday and pulled into this little stand off 183 because I saw the smoke. The guy running it had one offset cooker, no fancy rig, and he temped his brisket right in front of me and pulled it at 203. He told me he wraps in butcher paper at 170 and never looks back. What got me was he rests it in a cheap Igloo cooler for 4 hours and swears that beats any warming box. Any of you all run into backyard guys like this who out-cook the big named spots?
